Instructions:
Soak beans in water in a saucepan for 8 hours. ( Just put them in in the morning and forget about them until dinner). Bring to a boil and simmer, covered, for 1 1/4 hours. Meanwhile, heat oil in a frying pan and fry onions,
basil, oregano, and garlic. After a few minutes, add peppers, spices, chili pepper and salt. Cook until tender and add to the beans. When beans are done, drain excess water and serve over rice.

Metal Micky: I have the same problem you do. I don't like veggies, so I end up eating only bread and dairy. One good thing is pasta: most of the sauces you make for it have some sort of vegetable content, which you need, but don't taste like blah veggies. And I'm sure people in this room have hundreds of sauce recipes. :) Another good thing is beans/chili. Lots of recipes for those, too.

Curried Beans

Ingredients:
2 c dried beans (combination of chickpeas, black-eyed peas, pinto beans, small red beans, lentils, etc. whatever)
.1 t minced ginger root

.1 c chopped onion
.2 T olive oil

.1 t coriander

.2 t cumin
.1 t turmeric

.1/4 t cayenne pepper

Instructions:
Dried beans in large bowl. Rinse and remove funking stuff. Cover beans with boiling water and soak for four hours. (overnight is best.) Drain water. Cover beans with fresh water. Simmer 40-60 min. or until tender. In skillet, sautΘ ginger and onion in olive oil until soft. Stir in tomato, coriander, cumin, turmeric, cayenne pepper, salt and tomato paste. Stir periodically 5 min. Add beans. If beans become dry, add a few T of water.

per serving: 155 calories; 4 from saturated fat c = cup; t = teaspoon; T = tablespoon; I know you knew. Its easy (for me) to under cook the beans; make sure beans are done before adding to curry. This method of soaking the beans is supposed to reduce gassy nature of bean consumption. It won't work with lentils or split peas. Play with the curry, adjust it to your taste. You could use an equal amount of curry powder, but I prefer scratch, as well, I never use curry powder in other recipes any more but whip up some variation

Eggplant and Lentils

Ingredients:
1/2 cup lentils
.1/4 onion

.3 or 4 cloves of garlic crushed (onions diced by the way)
.A pad of butter or olive oil

.A double handful of spinach
.1/2 small eggplant diced.

.A dash of salt
.Feta to taste.

Instructions:
1. Cover the lentils with water and ring to a boil..2. When the lentils boil, lower heat to a simmer..3. Add the salt and cover the lentils, simmering for about 25 min..4. While the lentils are cooking, dice the onions and eggplant and crush the garlic. Also stem the spinach..5. Put the butter or olive oil in a frying pan or wok..6. With about ten min. left to go on the lentils, begin to sautΘ the onions and garlic..7. Add the spinach after the garlic and onions have begun to sizzle..8. When the spinach has cooked down a bit, add the eggplant and continue stirring.
9. Drain the lentils and serve on a plate with the spinach and eggplant. Crumble the feta on top to taste..
10. Serve with red wine. (I tried white the other day. I haven't tried red, but it seems to go better with lentil things and spinach anyway.)

Garlic Pasta

Ingredients:
1/2 lb. pasta (uncooked)

.6-8 cloves of garlic
.3 T olive oil

.1/2 cup heavy whipping cream (half and half can be substituted)
.salt

.parmesan or romano cheese

Instructions:
Slice garlic very thin and sautΘ in the olive oil until not quite brown (it gets bitter if it gets too browned). I sometimes throw in some oregano or red pepper at this stage. Add whipping cream a little salt and ample pepper and lower the heat a little.
Reduce liquid by simmering a few minutes. Toss with the pasta. (Cook it while you're making the sauce!) Grate as much cheese onto the pasta as you desire. Eat up!

This is a very good vegetarian pasta recipe, but it's certainly not low cal. Also, it's not vegan so I hope you're not of that persuasion. Compliments of the Frugal Gourmet. This is really easy and yummy! I often use rainbow, curly pasta -- it traps the pieces of garlic nicely. Oh, and you should try to use fresh parmesan cheese if you can because this loses something with the Kraft stuff. I know it's expensive, but it's much better in the long run and really worth it.

Cook the lentils in the water and salt covered for 20 min..Add the rice and cook covered for 15 min. more..Meanwhile, chop the onions fairly fine and cook in the oil till slightly browned..Add the onions and oil to the rice and lentils and cook uncovered, stirring occasionally to prevent sticking, over a very low flame, till all the liquid is absorbed/evaporated..

Serve hot or cold. It is better after its a day or so old. Cold it is good as a dip for crackers or pita bread. Warning: between the onions and the lentils it is very gas-forming. Very tasty though.

Quick and Tasty Tofu

1/4 # tofu extra-firm tofu

.Italian style bread crumbs.

Instructions:
Cut tofu into rectangles, approximately 1/4" by 1" by 2". Put oil in a skillet and heat. Dip tofu in egg, then coat with bread crumbs. do this twice for each slice of tofu. fry em up, about 1 minute on each side. drain on a paper towel. eat. (season if you desire, perhaps dip em in something....)

Here's a quick (bout 5-7 minutes total) tasty protein filled snack(or even could double it and use it as a main dish of a meal)
Cook the onion in butter until golden..Add the stock and bring to a boil..Add the sorrel and rosemary; simmer for 15 min..Stir in the potatoes; simmer for another 15 min..Stir in the cream and bring back to a simmer..Garnish with parsley.

Couldn't resist posting this recipe; I've tried it and it's quite good.
This is great for a warm summer late afternoon or evening meal with a crusty
roll and a green salad. If you've never tasted sorrel before it's a lemony
tart taste, so it gives the soup a nice kick.

1) The stirfry is served with Basmati rice. Or, if can cook rice in an Oriental style (so that it sticks together) you can use chop sticks to eat it, which is great.
2) Quorn. I'm vegetarian, so I use this stuff. It's wonderful. Take 250 grams (this is for 2 people), split the lumps into smaller pieces, half of third them, or even slice them up. Marinate them in pineapple juice with some soy sauce added. Also, slice up some water chestnuts and marinate them.
3) Make a 2 egg omelet and chop it up, remove from frying pan. You'll add it towards the end.
4) Okay, start off with the garlic (a couple of chopped up cloves), add the water chestnuts (not the marinade yet). Then thinly sliced carrots, then mushrooms (for a meal for 2, which this is, albeit a very big meal for 2, I'll add 250 grams of mushrooms, having sliced them thinly). Oops, the quorn was added straight after the water chestnuts. Then, bean sprouts, then lettuce, etc. Whatever you have to hand, that's the great thing, it'll usually work. Try Chinese leaf lettuce.
5) Spices... whatever you like. Towards the end you slowly add the marinade, of course. I like some extra soy sauce, ginger, curry powder, maybe some coriander or nutmeg, but the one thing I love to add (towards the end, so it makes a kind of sauce) is HONEY. Nothing like it. Tastes wonderful.
Then, serve immediately and enjoy. As I said - anybody have any other nice things to do? Thing about a stir fry - each one is an experiment.
